Holy cow this ice cream is absolutely amazing. I was highly impressed. I’m not a big ice cream fan it usually has a weird texture but this place has perfected ice cream! It’s super creamy and rich and the fresh waffle cones are a must!
I was hesitant of Republic after my previous interactions with the downtown location, however, it was incredible! It is rather small on the inside and when it is busy there is not much standing room, but the line moved rather quickly. It was close to the end of the day and it's the closest ice cream shop to central Sullivan's so I understand the rush. The servings were hefty at a decent price, even for two it wasn't so expensive! They offer a range of options as well including coffee and milkshakes. The cappuccino ice cream was delectable and I would definitely get it again. The porch seating outside was very nice and shielded us from the unexpected rain. All around a wonderful experience!
Service was great! My dog yanked his leash and the Bordeaux Cherry went tumbling to the ground and the nice lady gave me another Cherry and treated my pup to a little taste of whip cream☺️🐕 We were pleasantly surprised! Everything seemed homemade so it was truly a Party on your Pallet!

I could’ve cried when she told me everything was gluten free. I don’t know if I’ve ever been able to enjoy a waffle cone in 33 years, let alone a waffle cone with cookies n’ cream ice cream. It was absolutely delicious, too. We visited from Wilmington, NC. Thank you SO much for making a gluten free gal’s day! I will never forget this experience. Still smiling!
Okay, so one thing I love is ice cream. Let me clarify, I like REALLY good ice cream. The kinda ice cream your grandmama would make. Republic does this with sheer excellency. The milkshakes are immaculate. I got the mocha cookie(coffee,cookies and cream, chocolate) and holy cow, was that not just the best dang milkshake I've ever had. The whole selection of ice cream is wonderful. It's all homemade and it shows. The restaurant itself is cute and quaint. Do yourself a favor and get some ice cream here.
We were a party of four planning on purchasing four cones but after the ice cream server dropped the ice cream scoop on the floor and then put it back in the communal scoop water and proceeded to use a scoop from that same water to lean into the ice cream cooler and let her long hair cascade all over the the various flavors, the half who had not been served yet decided to forgo dessert. All this after my sweet sweet mother was told that they had "just" run out of waffle cones despite appearing to have batter remaining. With online ordering I can see that being a thing, so that wasn't the deal breaker. Neither were the petite portions. Just the questionable food handling habits. Overall the experience deflated the purpose for entering an ice cream shop in the first place. Showing photos for one and two scoop cones. My 3 year old daughter got a few licks in before I was able to snap a photo of the single scoop.
It’s Nov 2023. This place is perfectly located right next to the beach. Uses excellent ingredients & makes it all by hand. And yet reading some reviews you’d think they were serving store bought generic brand ice cream and over charging. So, heads up low standard cheap people. You’re in a tourist spot. You’re gonna pay more. You’re eating homemade food made with real easy to pronounce ingredients. You’re gonna pay more. You want $2 options? Go to WalMart and then complain how nothing is made in the USA anymore… Everything is Gluten Free. Cones included. And they even have waffle cones (yes - gluten free). Homemade ice cream (including cookies & cream which again is Gluten Free). Stellar ingredients in the ice cream. Regular vanilla & chocolate had all of 4 or 5 total ingredients. On other flavors I noticed coconut oil which in 2023 is a big deal since everyone is terrified of seed oils (soybean, safflower, sunflower, etc). The ice cream was some of the best I’ve ever had. Huge noticeable difference in taste. And the gluten free waffle cone? I’ve no idea how they do it. The only “tell” was it’s more brittle (as most gluten free pastries are) than a wheat waffle cone. But the taste? Identical. This place gets an A+
