These chicken nachos aren't just a dish; they're an experience. Each chip is generously topped with perfectly grilled chicken, melted cheese, and a harmonious mix of fresh lettuce, guacamole, and tomatoes that bring a burst of freshness. The jalapeños add just the right amount of kick, making each bite as exciting as the last. The accompanying salsa is a standout, with a depth of flavor that elevates the nachos to new heights. And the margaritas? They're not just strong; they're a bold statement of flavor, expertly mixed and wonderfully complementing the meal. Whether it's the satisfying crunch of the nachos or the smooth sip of the margarita, this meal scores top marks on taste and satisfaction.
Dear Christos and Gerry Stathatos,
I recently had the pleasure of visiting Carlos and Pepe’s in Fort Lauderdale, Florida, and couldn't help but notice a remarkable similarity between their salsa and yours at Don Carlos Mexican Restaurant. There's a subtle yet notable difference, however, that I thought might be of interest to you.
While your salsa already stands out for its flavor, the salsa at Carlos and Pepe has a slightly different texture that could be a game-changer for you. Their blending technique results in a consistency that retains more pulp, giving it a more robust and less juice-like quality. This small tweak adds an appealing texture to the salsa, enhancing the overall experience of the dish.
Perhaps this could be an avenue for experimentation in your own kitchen. Emulating this particular aspect of their salsa might add an extra edge to your already delightful Tex-Mex offerings. It's always inspiring to see how different culinary experts put their unique spin on similar dishes, and I believe this could be a wonderful opportunity for you to further refine a recipe that has already won over so many hearts.
Best regards and continued success in your culinary endeavors,
First of all the food is great BUT for the price of was expecting it to taste better... Second, it loses a full star just because of how tasteless and watery the salsa is. They have an "spicier" option that just taste like a microwaved tomato. The service from Nick was great he was very attentive and made sure we never had an empty drink.
First visit and dang was it good, the salsa was super fresh, queso was tasty, all the meals we had are excellent, service was a bit slow but we didn't mind having drinks and catching up with our Bear...
Stopped in here while in town and was very pleased. Food was excellent, and although they had a very large private party on the patio, I still felt that I received excellent service. I had the Monterey dinner and it was a fantastic mix of flavors that went very well together. Definitely worth a stop if you're in town!
The food at this chain restaurant is typical Tex-mex food, although some of the entrees prepared by this particular restaurant were very good, specifically the Spinach-poblano enchiladas. The red salsa is lacking in taste and is watery, although the green salsa is good. The service was outstanding at the Waco restaurant with the wait-persons being very attentive and very timely in taking the orders and checking back with the diners. If this restaurant ups their game with the red salsa and their menu, it would be an A-1 place to eat.
Brisket taco were disgusting. I had to cover them in hot sauce to get them down. We also got beef fajitas chimichanga and got charged 7 extra dollars for the beef. Service was good but the food could be a lot better
The service was horrible brought a unsweetened tea with aroten Lemmon the brought a sweet tea whe complained. The food order was wrong and the the fajitas were cold and the Pico guacamole were warm asked for refried beans but got Charo. The waiter and Manager would not check on us. Overall a horrible experiance
Group of 9 people stopped in for lunch. The parking is ample and it was not crowded. Complimentary chips and salsa are served warm (tasty!) and adult beverages are available. Margaritas were good. They have a large menu and offer a daily weekday luncheon special. Off the regular menu I had the Dos Amigos plate..which is 2 cheese enchiladas, rice and beans. Others had the Chicken enchilada plate, and the Chili Relleno plate. Food was good but not exceptional. Prices are reasonable, as well. The problem is that the service was poor. Took about a half hour to get the lunch entrees, and almost as long to process our tabs. Yes, we were a group of nine, but this was noteworthy. Unfortunately, since otherwise not a bad meal.
My experience for the first time was great.

It was my 1st time here and didnât realize I been driving past this place for years during long road trips.
Cashier lady welcomed us and asked if we're dining in or carry out she was very polite and informative of what food options were available.
I had the gorditas.... Chile poblano con queso fresco,,,, I really enjoyed the masa of the tortilla, it was soft and really tasty. I had to buy a bag of tortilla chips, better than restaurant style. And they sell other stuff
Food was great! My kids and other family member loved everything we ordered. Birria was amazing and so was my Baylor plate. We got some churros to go and my goodness- Iâve never tasted something so heavenly. My kids were not rested as nusenses at a
Our favorite Tex-Mex food find in Waco, so far! I had the Enchiladas verdes and they were delicious. Weâve visited twice and both times we had excellent and friendly service. Will definitely return to try more of their dishes and take advantage of

The PHO here is amazing!! Holy cow yummy. I also tried the grilled pork bowlâit reminds me of Vietnamese vermicelli, but here itâs served warm. The âhouseâ fish sauce with it is very mild flavored. The menu only has a few items, but it all se
